What do you do when you have a hankering for sunflower seeds but you don't have enough chewing surface that matches up to crunch them? I was faced with the dilemma today, so I decided to be creative.
I took the sunflower seeds and put them in the mini-food processor that my mom has. I added a couple teaspoons of olive oil and ground the heck out of them. I didn't make it quite into sunflower butter, but ground it enough to make chewing easy. I then got some Tia Rosa Megathin tortilla chips and used them to scoop up the ground sunflowers. Ground sunflowers make a pretty good dip, but the olive oil I used to hold them together is a little strong and leaves a slightly bitter aftertaste... or perhaps it's these sunflower seeds that have been sitting around for a couple months. I'm not sure. Otherwise, it's not bad. I think I'll experiment with some fresh sunflower seed and fresh olive oil in the future unless someone knows of a healthy oil that might be better and more compatible with the taste of sunflower seeds.
