      • there's any visible dirt is just a lot easier and it helps every other co-worker out. This is passed by every manager and superior I've ever worked with and it's just second nature to most places I've worked at in the past. Also, any time we've come across telling people that we have dropped it and we have to re-cook it, has NEVER been the case. It's just that we've simply forgot to cook it. That or that we've over-cooked it. Telling a customer the truth would just look like we're shit at our job but it's an honest mistake that even the best of chefs will make from time to time.

      • After working in restaurants for years, I've come to the conclusion that very few restaurants are on the ball like you might think or would certainly expect. Every single confession I've read with regards to food premises has been true to pretty much all places I've worked at in the past and no, these aren't places like KFC or McD's. These are proper restaurants and carveries. I'll just state the most obvious one that I can guarantee 90% of food places will do. Dropping food doesn't mean re-cooking it. At all. It just means checking it to see if it's dirty and if there's no visible dirt then it's 'clean' and if it's not, then a little scrape of a knife or dip in a boiler will sort it out. Logically, this makes sense to most food areas (and this is why I believe most places do the exact same thing) due to the fact that you have to get food out in a certain amount of time and re-cooking it could potentially take an additional 20 minutes.
