Normal Eggs Too Expensive? Well, You Can Now Eat Iguana Eggs

If you don’t live in the South, you might not know that iguanas are an invasive species. Sure, they may look like freaky little dinosaurs to people in the north, but for Southerners, they’re a menace that’s known for eating property, hurting infrastructure and pooping all over the place.
One man saw the twin problems of “too many iguanas” and “high egg prices” and thought, “Hey, why don’t we kill two birds with one stone?” So, he set up his iguana egg kitchen, and now, he’s encouraging others to do the same.
“This is life in Florida, okay?” said John Johnson, owner and hunter for Down Goes Iguana. He’s not wrong about that! “[Iguana eggs are] lot cheaper, okay? And, these are local, so there’s no tariffs.”
But what do they taste like? According to Johnson, they taste like normal eggs — though I think a lot of people are just going to take his word for it.
