The guy wanted to go for a coffee but not too far from his house. That was weird for her. Soon after they got their coffees the guy asked her to his place for dinner, he apparently was a cook got a "fresh batch of vegetables and fish".

After she was freaked out and said "that's far too soon" he ran away "for the supplies". Lauren thought the weird thing was over, but no- he texted her to come for dinner to his place the next day.

That freaked her out even more, so she declined politely (so they would no have to look for her body in the river)... and he asked for his money back.

For the guy the coffee he paid for was an investment that didn't paid off in sex, so he demanded his money back. Lauren risked him going Mike Myers on her and decided to show him how stupid his behavior was.
